Jamme Ja, the real Neapolitan street-food in Berlin

Stefania, born in 1974, is a research biologist and one of the three partners of the restaurant Jamme Ja – in Friedrichshain, Berlin. She did this big step with his boyfriend Fabio – a naturalist – and with Vincent, their friend and partner. «Fabio and I were thinking about going abroad in order to work, when Vincent said us “I’m going to Berlin! Why do not you come with me?” and from that moment the story began.»

Stefania and Fabio run a scientific association in Italy called “Natura sottosopra”, which provided scientific and environmental education in schools and in everything related to the scientific sphere. The project succeeded, but there not enough funding to be given to schools. Furthermore, the Museum of Science in Naples was burned and from that moment the job situation became heavy. «We really enjoyed that kind of work, it included all our interests: hiking, scuba diving, archaeological and caving, rock climbing. Today the situation for us is a little bit difficult… There are no mountains here in Berlin!»

From biologist naturalist to chef. «I have always worked as a scientific research , but one day I felt the need to stick my neck out with something more practical and so I rediscovered my passion for cooking. Fabio worked in Naples in the field of gastronomy. I had the chance to meet some of the masters of the Neapolitan cuisine, as Antonio Tubelli, the “father” of the Neapolitan street food.»

Jamme Ja concept. «Jamme Ja was created in order to promote the Neapolitan Street Food – not only the wood-fired pizza, as many people could think, but also the fried pizza, potato croquettes, rice balls, fried fish and the famous cuppetiello (Neapolitan fry-up). We opened this place in order to approach the idea of the market and keep alive the image of the consumption of food on the street. The idea was to differentiate ourselves, trying to give a real idea of the Italian cuisine and not an adaptation to German tastes. For example, I don’t cook Carbonara -not only because it is not a Neapolitan meal, but also because I will never put the cream instead of eggs. I refuse to do it! Jamme Ja is a place in which we spread our culture and our typical food.»

From Naples to Berlin. «Jamme Ja wants to be a stepping stone. I love the scientific world, but I think I will take care of the kitchen. Fabio, instead, will return to work in the scientific range. In Berlin we embarked various collaborations with some German-Italian associations that work with children, but we have some difficulties in interacting with German people, as we cannot speak the language. That’s why we have to learn it.»
